Braised Short Ribs

˝ Bottle D’Avila Wine

2 cups Beef Stock

2 whole garlics

1 onion – chopped

2 carrots =- chopped

4 celery – chopped

4 springs thyme

3 tblsp tomato paste

Salt & pepper

4-5 short ribs

275 for 4 hours

In veg oil Brown Ribs

Drain all fat 2 tblsp oil cut both heads of garlic in half.

Brown cut side down (2 min)

Add onions, celery, carrots sauterne (5-8 min)

Put in tomato paste and deglaze.

2-3 min. Pour in wine. Bing to boil. Add beef stock & thyme, salt & peper.

Put cover on Dutch oven in Oven.
